Vegan Meal Prep with Chickepea Penne Pasta, with Soy Based Protein, Spinach, Microgreens, Corn, Carrots, and Edamame

Plated vegan meal prep, with chickpea pasta, meatless meat, corn, carrots, broccoli, and soybeans, to which I added sautéed spinach, and microgreens, in a tomato red sauce.

((It would be weird if the tomato sauce were not red; yeah?))


Protein: Soy-Based Ground Beef, Edamame

Veggie: Carrots, Spinach, Microgreens

Carb: Chickpea (Penne) Pasta by Banza, Corn

Sauce: Tomato Sauce (from a jar)


+ This meal is refined sugar free (and sugar substitute free), to the best of my knowledge.
