You maybe can't tell, but there's bacon in that sandwich. There's also spinach, but it's mostly stuff that is not spinach; like bacon -- and cheese ((and bacon)).
I got a green bell pepper in my CSA box (which is really a bag), and I've only really made one thing with them so far, and that was chili. I'd also been given carrots, which the recipe calls for, so this is as creative as it gets this week ((bit of a repeat)).
