Mushroom Chicken Meal Prep, with Veggies, Rice, and Vegetable Samosas

Today’s meal prep plating includes vegetable samosas from Trader Joe’s (from frozen, only 40 calories a piece; definitely recommend).


Protein: Chicken, Edamame

Veggie: Mushrooms, Red Onions, Carrots, Broccoli, Microgreens

Carb: Rice, Corn, Vegetable Samosas (pastries filled with potato, veg, and spices; Indian flavor)

Sauce: Mushroom Bisque Soup by Amy’s Kitchen


+ This meal is refined sugar free (and sugar substitute free), to the best of my knowledge.
