Meatless Monday, Tuesday, Wednesday, Thursday… (subbed in vegan ground beef (or textured soy chunks, if it suits you) for this week’s meatless meal prep; plus veggies and rice, and veggies and pasta).


Protein: Soy-Based Ground Beef, Edamame

Veggie: Mushrooms, Broccoli, Onions, Carrots

Carb: Chickpea (Penne) Pasta, Rice, Corn

Sauce:Mushroom Bisque Soup by Amy’s Kitchen


+ This meal is refined sugar free (and sugar substitute free), to the best of my knowledge.
