Fried Egg Sandwich with Veggies

If you’ve been following along for awhile (thank you (and, tell a friend), and), these are the last of the roasted carrots, and sautéed mushrooms I made (for the Forks Over Knives cooking course), with some freshly steamed broccolini, and the ever-present fried egg

Protein: Pasture-Raised Egg by Vital Farms

Veggie: Broccolini, Carrots, Mushrooms, Microgreens, Spinach

Carb: Sourdough Bread, Tomatoes, Avocado

Seasoning: Pepper
