It’s been a long time since I tried to make an omelette, but that’s two egg-days in a row, so I thought I’d switch it up.
I bought another crab cake from a deli counter recently, and used some of it here, with tomatoes and spinach.
Since I’m avoiding my peas this week, I’ve taken to clearing out the freezer, and these are the last of the zucchini pancakes.
I still want a similar recipe (if you have one), but I will wait until it is required of me, to seek one out; today, I’m set on zucchini pancakes ((ty v much)).
Also avocado, olives, pico de gallo, and microgreens are no surprise — just like YEAES, I can believe it’s May already ((you silly humanbots)).
+ This meal is refined sugar free (and sugar substitute free), to the best of my knowledge.
