Veggie: Sautéed Spinach, Microgreens
Carb: Tortellini (Pasta), Tomatoes, Olives
Sauce: Pesto
I made this pasta ahead of time, and portioned it out; then it was quick to whip up some spinach, heat the pasta, and toss with tomatoes, olives, and Parmesan.
